More on breakfast

I have been flicking through my cook books thinking about breakfasts after I wrote this post about wanting to change things up a little and discussing them with Cameron. This one appealed to him most - home baked rusks and cocoa.


We found a recipe for rusks in Falling Cloudberries which has simple ingredients and today we had a go at making them. The recipe makes 50 and says that they keep for about 5 days so we halved it. If you want to try them out but don't want to buy the book, I found a lot of rusk recipes with an internet search. The recipe we used was yeast free.
Cameron is extremely pleased with them. When I make them again I might experiment with less sugar and maybe a mix of different flours, adding some wholemeal.

Next, I'd like to move on to warm breakfasts. I'm interested to hear what your favourite breakfast for a cold morning? Don't be shy, leave a comment and let me know.

    I like eggs (any way) and toast, we also do pancakes, kids do porridge with jam/syrup/fruit--and sometimes at the same time, we also like kippers with Irish bread, and the usual sausage & eggs.

    For eggs--sometime we do scrambled eggs with cheese and salsa or peppers and wrap in a tortilla.

    Though we are trying to look for more wheat free alternatives. One I haven't done yet, but want to, is puy lentils with poached eggs. We are also going to try buckwheat pancakes.

  2. the cocoa and rusk looks yummy, our library couldnt get hold of this book, I love apples for jam so may have to add this one to my ever growing books for christmas list! I really like homemade granola, warm from the oven with some natural vanilla yoghurt, eggy bread goes down well here too with a mug of warm milk a little grated nutmeg and honey. We seem to be stuck in a bit of a porraige rut at the moment

    Elizabeth - do you premake your pancakes, or the mix? I'm not sure I'd be alert enough to tackle them from scratch in the morning on a regular basis.

    Becky - I know that porridge rut very well, that's what we did for warm breakfasts last autumn/winter!

    Cameron is loving the eggy bread and scrambled eggs ideas so far.
