Autumn Baking

Oh, what miserable weather we have today.  A perfect excuse for baking, I'm sure you'll agree - even if the only reason you're doing it is to stand next to a hot oven!

Lately I've been going through the Autumnal recipes on my Pinterest boards and trying a few of them out.  I love the ideas and inspiration I get from that site but over the year I've discovered that many of them are duffers, unfortunately, but these ones were not...

Pumpkin Nutella Swirl Bread - lacking in finesse!

Last week I made Pumpkin Nutella Swirl Bread which was delicious and moist and a big hit with Cameron. I didn't have the appropriate mini loaf tins so I made mine in a square baking dish.  
Because my chocolate spread was quite cold it was a bit stiff which meant that my swirling was somewhat lacking in finesse but they tasted good just the same.

I also made Petite Pumpkin Spice Donuts which are baked, not fried. I halved the recipe because it seemed quite a large quantity but they are quite moreish so maybe that was a mistake, depending on your point of view, haha!
I don't have a mini doughnut pan so I improvised with a mini bundt tin.  I got 12 mini bundt doughnuts (about the size of a muffin) and a mini loaf.

The recipe suggests brushing the baked doughnuts with melted butter and rolling in sugar but that sounded like a faff to me so I sugared the baking tin with granulated cane sugar after greasing it and they came out sugary with no extra effort needed (gotta love a short cut!).

The doughnuts were surprisingly doughnutty despite not being fried and they were so popular that they barely lasted the day!

If these blustery days continue, I think I will be testing out some soup recipes next.

    I always resist admitting to myself it's autumn...but think I may be forced to now!

  2. Can I just ask where you get canned pumpkin from? Not sure I have ever seen it in a supermarket. Many Thanks.

    1. Hi - you can buy canned pumpkin online if you can't find it in the shops but it is quite expensive. I'm using some I made last year and froze as I haven't managed to grow any pumpkins this year. You could substitute it with butternut squash - that works really well.

  4. Like the look of both of those. I have been trying not to move into Autumn yet but had to wear my gloves today to walk the dog so I think I am now officially in the Autumn mindset. I also bought some very cute pumpkins yesterday so my first really Autumnal recipe will be a pumpkin lasagne.
    Now, pass the doughnuts! :)

  5. We have been harvesting apples from the garden so I've made apple pies, stewed apple and apple chutney. The chutney is a first for me ... there are some lovely smells wafting from the kitchen, so I hope it tastes as good as it smells!
