Cheesy Poppy Seed Bites
Apologies for the absolutely terrible photograph, it seems to get dark here sometime around lunch at the moment. Don't let it put you off making them because they're delish!

150g self raising flour
½ teaspoon salt
75g butter
150g grated cheese, ½ for pastry, ½ for topping
1 egg and 1 tablespoon milk, beaten together
1 teaspoon smoked paprika
½ teaspoon mustard powder
Poppy seeds for sprinkling
Sift the flour, paprika, mustard powder and salt into a bowl. Add the butter and rub in to make fine breadcrumbs.
Stir in half the cheese. Add all but 1 tablespoon of the milk and egg mixture and mix to form a dough.
On a floured surface, roll out the dough to about 5mm thick and cut shapes using a cookie cutter.
Keep going until all the dough has been used up.
Brush the shapes with the remainder of the milk and egg mixture and sprinkle with cheese and poppy seeds.
Bake at 200C for 8-10 minutes and cool on a wire rack.
