12 Days of Festive Treats - Day 7

Chocolate Pepper Cookies



Adapted from Martha Stewart's Christmas

Save a third of the dough for tomorrow :o)




1½ cups unsalted butter
1 and three quarter cups sugar
2 large eggs, lightly beaten
3 cups sifted plain flour
1½ cups cocoa powder
Quarter teaspoon salt
Third teaspoon freshly ground black pepper
Pinch of cayenne pepper
1 teaspoon cinnamon
Chocolate for decoration if required






Cream butter and sugar, add eggs and beat until fluffy.


Sift together dry ingredients and add to the butter mixture. Beat until well mixed. If dough seems to soft add more flour.

Wrap dough and chill for at least an hour.

Preheat the oven to 180C and cover baking sheets with baking paper.

On a well floured board, roll out the dough until an eighth of an inch thick. Cut dough into desired shapes and set 1-2 inches apart on baking sheets.

Bake for 8-10 minutes or until just crisp. Do not allow to darken.

Cool on racks.

For decoration - melt chocolate and drizzle over cooked cookies.
