Sugar Cookies
Adapted from Martha Stewarts Christmas
Save a third of your dough for Wednesday :o)

½ cup unsalted butter
1 cup granulated sugar
2 cups plain flour
Quarter of a teaspoon of salt
½ teaspoon baking powder
1 large egg, lightly beaten
2 generous tablespoons brandy
½ teaspoon vanilla extract
Cream the butter and sugar.
Sift together the dry ingredients, add to butter mixture and beat well.
Add the egg, brandy and vanilla and beat again until well mixed.
Chill dough for at least an hour
Preheat oven to 180C
On a well floured board, roll out dough to an eighth of an inch thick and cut as desired placing pieces 1-2 inches apart on baking sheet (we covered ours with baking paper).
Bake for 10 minutes (more or less depending on the size of cutters you used), do not allow to brown.
Cool on racks and ice as desired.
