'S' shaped cookies
Recipe courtesy of my Mum.
I remember these cookies from a Christmas fair I attended as a child where my Mum pointed them out to me because they looked like swans! Ours were made in a bit of a hurry and don't look very swan like at all but are tasty all the same.

125g/4oz margarine
125g/4oz light brown soft sugar
1 small egg - beaten
3 drops of almond essence
175/6oz plain flour
50g/2oz ground almonds
icing sugar to sprinkle
Cream margarine and sugar together until light and fluffy
beat in the egg and almond essence.
Gradually work in the flour and ground almonds to give a firm but pliable dough.
Divide in half and roll out each piece to a sausage shape 1 - 2 cm in diameter.
Cut into 8.5-10 cm lengths and place on greased baking sheets in an 'S' shape.
Bake in a preheated oven 180c/350f/gas mark 4 for 15-20 minutes or until pale golden.
Leave on the baking sheets for a few minutes, then cool on a wire rack. Serve sprinkled with icing sugar.
