Orange Cinnamon Sablés
Adapted from a very old Good Housekeeping recipe.The trick to these is to make them as thin as possible so they melt in the mouth.
125g plain white flour
2.5ml ground cinnamon
50g icing sugar
finely grated rind of 1 orange
100g butter, softened
1 egg yolk
15ml (1 tablespoon) orange juice
Sift the flour, cinnamon and icing sugar together into a bowl. Stir in the orange rind, then add the butter, egg yolk and orange juice. Beat well to form a soft dough. Wrap up in cling film and chill for 30 minutes.
Roll out the dough on a lightly floured surface to a 3mm thickness. Stamp out 3inch rounds using a pastry cutter and transfer to oiled baking sheets.
Bake at 180C for 8-10 minutes until golden. Cool on a wire rack.
