Mince Pies
A classic "must have" in our house at Christmas.
Everybody seems to have their own way of making them from home made fillings to designs and toppings. I don't claim to have the best but do get a lot of compliments on the pastry recipe we use for our mince pies, which is what I will share here today. It comes from a Good Housekeeping recipe book that is no longer in print.

225g plain white flour
pinch of salt
150g butter
30ml caster sugar
1 egg yolk
45 ml (3 tablespoons) cold water
To make the pastry, sift the flour and salt into a large bowl and rub in the butter using your fingertips until the mixture resembles coarse breadcrumbs. Stir in sugar.
Mix the egg yolk with the water, then add to the dry ingredients and mix to a dough. Knead gently until smooth, wrap in cling film and chill for 30 minutes.
I'm pretty sure you know what to do with it after that!
Cameron and I made a few batches of these and took them down to a drop-in lunch session for adult mental health service users that I have been involved with over the years, which was a good deed I had on my 101 things list.

Thanks for sharing the mince pie recipe. They look delicious and I will definitely have a go at making them this weekend.
I love the 101 things idea so will have a go at doing that as a challenge for the new year.
