Chocolate Star Biscuits

150g unsalted butter, softened
150g caster sugar
1 egg yolk
250g self raising flour
25g cocoa powder plus extra for sprinkling
Cream the butter and sugar together in a bowl until pale and fluffy. Beat in the egg yolk. Sift the flour and cocoa powder into the bowl and mix to form a firm dough using a round bladed knife.
Turn dough out onto a lightly floured surface and knead lightly. Chill the dough in the fridge for 30 minutes.
Roll the dough out to about 5mm thickness and cut star shapes using cookie cutters. Place on baking sheets 1-2 inches apart and sprinkle with cocoa powder.
Bake at 180 C for about 10 minutes (depending on the size of cutters you use). Watch carefully as they brown very quickly towards the end of the cooking time.
Cool on wire rack.
